Kate Shafto, MD, FAAP, FACP

Kate Shafto is board certified in Internal Medicine, Pediatrics, and Integrative Medicine (ABIOM) after completing a 2 year fellowship with the Andrew Weil Center for Integrative Medicine, Class of 2017. She is the Course Director for a second year medical school course (Foundations of Clinical Thinking), and involved in developing new food/food-systems and nutrition curriculum for the medical school. Her clinical work is at Hennepin Healthcare, with Group Visit programs and Integrative Pain Management education and training.

Dr. Shafto teaches a course she co-developed with Chef/MPH Jenny Breen called Food Matters, which involves hands on cooking, and experiential education on the connections between our food, food systems and dietary patterns as they relate to clinical healthcare. The course is available for health sciences graduate students for 1 credit through the Bakken Center for Spirituality and Healing, as well as a CEU version for practicing health professionals of all disciplines.

Dr. Shafto's research interests include studying the outcomes of nutrition, cooking and lifestyle-related educational interventions with health professional students and practicing providers on both personal wellbeing and inclusion of evidence-based lifestyle-first interventions in patient care.

Outside of work, she enjoys spending time with her husband, cooking, practicing regenerative agriculture, yoga, music, hiking, skiing, travel, and experiencing other cultures locally and abroad.
