Black bean, tofu, and miso salad recipe

Here is a simple recipe with some unique ingredients that can be fun to experiment with.

A Healthy Recipe

This recipe uses two types of plant-based protein. Tofu is a hardy source of protein. Black beans add even more protein, and serve as the main source of fiber and carbohydrates in this meal. When mixed with vegetables, it becomes a full balanced meal.

Black Bean, Tofu, and Miso Salad 

Ingredients

  • 2 cans Black Beans
  • 1 package extra-firm tofu, cut into 1 inch pieces
  • 4 tablespoons olive oil
  • 1 red bell pepper diced or 1 small jar roasted red bell peppers
  • 1 bunch green onions, thinly sliced
  • ½ cup miso paste
  • 1 ½ cups rice vinegar
  • 1 tablespoon red pepper flakes (optional) 

Instructions

Rinse and drain the beans. Fry the tofu in oil until it’s nicely browned on all sides. Combine the tofu with the beans. Add the diced bell pepper and onions. In a separate bowl, whisk together the miso paste, rice vinegar, and red pepper flakes. Dress the bean mixture with the miso sauce. Stir to combine.

Start by chopping onions.

Rinse and drain the beans. Fry the tofu in oil until it’s nicely browned on all sides.

Combine the tofu with the beans. Add the diced bell pepper and onions.

In a separate bowl, whisk together the miso paste, rice vinegar, and red pepper flakes. Add to the bean mixture and stir.
